Ultimate Summer Salsa


I served this as a side dish for four, along side a slow cooked beef burrito

1 tablespoon finely chopped coriander

1 tablespoon finely chopped basil

1 teaspoon finely chopped chives

1/2 a red onion also finely chopped

1 punnet mixed cherry tomatoes diced

2 corn on the cob, shaved off

1/2 a mango diced, and 1/2 to enjoy

Lightly grill the corn on the barbecue, or girdle pan.

Don’t be afraid of the little black lines here and there.

Once cooked through shave off the kernels.

Mix all ingredients together, season to taste

Add a nice big squeeze of lime juice and a drizzle of extra virgin olive oil.
